Yaroa is an iconic and indulgent street-food dish hailing from the vibrant streets of the Dominican Republic. Born in the city of Santiago, this layered casserole is a flavorful medley of seasoned ground meat, creamy mashed plantains or fries, gooey melted cheese, and a variety of toppings. Popular among party-goers and street food enthusiasts, Yaroa is a comforting dish reflecting the Dominican culture’s love for bold flavors and communal eating. Ingredients

  • Ripe plantains – 4 large / 800 g
  • Ground beef – 500 g / 1 lb
  • Onion, chopped – 1 medium / 150 g
  • Bell pepper, chopped – 1 medium / 120 g
  • Garlic cloves, minced – 3 cloves / 15 g
  • Adobo seasoning – 1 tbsp / 8 g
  • Salt – to taste
  • Black pepper – to taste
  • Olive oil – 2 tbsp / 30 ml
  • Mozzarella cheese, shredded – 200 g / 2 cups
  • Ketchup – 2 tbsp / 30 ml
  • Mayonnaise – 2 tbsp / 30 ml
  • Butter – 2 tbsp / 30 g

Instructions

  1. Peel and boil the ripe plantains until soft, about 15-20 minutes.
  2. While the plantains cook, heat olive oil in a pan over medium heat, add chopped onion and bell pepper, sauté until soft.
  3. Add minced garlic, continue to cook for 1 minute.
  4. Add ground beef, adobo seasoning, salt, and pepper, cook until the beef is browned and cooked through.
  5. Drain the cooked plantains and mash them with butter until smooth.
  6. Preheat oven to 180°C (350°F).
  7. In a baking dish, layer half of the mashed plantains, followed by the beef mixture and half of the cheese. Repeat the layers.
  8. Bake for 15-20 minutes or until the cheese is melted and bubbly.
  9. Drizzle ketchup and mayonnaise over the top before serving.

  • Mozzarella cheese -> Cheddar cheese
