Ingredients
- beef chuck – 1.5 pounds / 680 g
- red wine – 1 cup / 240 ml
- yellow onion – 1 large, chopped
- garlic cloves – 3, minced
- tomato paste – 2 tablespoons / 30 g
- beef broth – 2 cups / 480 ml
- bay leaf – 1
- carrots – 2, sliced
- potatoes – 2, cubed
- paprika – 1 teaspoon / 2 g
- olive oil – 2 tablespoons / 30 ml
- salt – to taste
- black pepper – to taste
Instructions
- Cut the beef into small cubes and season with salt and pepper.
- In a large pot, heat olive oil over medium-high heat and brown the beef in batches.
- Remove beef from the pot and set aside. Add onions and garlic to the pot, sautéing until translucent.
- Stir in tomato paste and paprika, cooking for 1 minute.
- Deglaze the pot with red wine, scraping up browned bits from the bottom.
- Return the beef to the pot. Pour in beef broth, add bay leaf, carrots, and potatoes.
- Bring to a boil, reduce heat to low, cover, and simmer for 1.5 hours until the meat is tender.
- Adjust seasoning with salt and pepper before serving.
