Ingredients

  • fresh squid – 4 whole squids, cleaned
  • lime juice – 2 tablespoons / 30 ml
  • fish sauce – 2 tablespoons / 30 ml
  • sugar – 1 tablespoon / 15 g
  • garlic – 2 cloves, minced
  • chilies – 2 small red, finely chopped
  • sunlight – 1 full day exposure
  • oil for frying – 2 tablespoons / 30 ml

Instructions

  1. Clean the squid thoroughly, removing the innards and cartilage, leaving the tentacles.
  2. Immerse squid in a combination of lime juice and fish sauce for 30 minutes.
  3. Hang the squid in direct sunlight and allow it to dry for a full day, ensuring it attains a leathery texture.
  4. Mix sugar, garlic, and chilies to create a dipping sauce.
  5. Heat oil in a pan over medium heat and lightly fry the squid until it becomes golden and aromatic.
