Ingredients
- fresh squid – 4 whole squids, cleaned
- lime juice – 2 tablespoons / 30 ml
- fish sauce – 2 tablespoons / 30 ml
- sugar – 1 tablespoon / 15 g
- garlic – 2 cloves, minced
- chilies – 2 small red, finely chopped
- sunlight – 1 full day exposure
- oil for frying – 2 tablespoons / 30 ml
Instructions
- Clean the squid thoroughly, removing the innards and cartilage, leaving the tentacles.
- Immerse squid in a combination of lime juice and fish sauce for 30 minutes.
- Hang the squid in direct sunlight and allow it to dry for a full day, ensuring it attains a leathery texture.
- Mix sugar, garlic, and chilies to create a dipping sauce.
- Heat oil in a pan over medium heat and lightly fry the squid until it becomes golden and aromatic.
