Ingredients

  • vermicelli pasta – 12 oz / 340 g
  • olive oil – 3 tbsp
  • garlic – 3 cloves, minced
  • cherry tomatoes – 2 cups / 300 g, halved
  • red bell pepper – 1, diced
  • kalamata olives – 1/2 cup / 75 g, pitted and sliced
  • capers – 2 tbsp
  • Pecorino Romano cheese – 1/2 cup / 50 g, grated
  • fresh basil – 1/4 cup / 15 g, chopped
  • salt – to taste
  • black pepper – to taste

Instructions

  1. Boil the vermicelli pasta in salted water until al dente, according to package instructions. Reserve 1/2 cup of pasta water and drain the rest.
  2. In a large skillet, heat olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
  3. Add cherry tomatoes and diced bell pepper to the skillet. Cook until tomatoes start to soften, about 3-4 minutes.
  4. Stir in the olives and capers, cook for another 2 minutes.
  5. Add the cooked pasta to the skillet and toss to combine with the vegetables. Use reserved pasta water to adjust the sauce’s consistency if needed.
  6. Season with salt and black pepper. Stir in fresh basil and sprinkle with Pecorino Romano cheese before serving.
