- rice vermicelli noodles – 200 g / 7 oz
- sesame oil – 2 tablespoons / 30 ml
- garlic, minced – 2 cloves
- carrot, julienned – 1 medium / 100 g
- cabbage, shredded – 1 cup / 75 g
- mushrooms, sliced – 1 cup / 100 g
- soy sauce – 3 tablespoons / 45 ml
- light soy sauce – 1 tablespoon / 15 ml
- bean sprouts – 1 cup / 100 g
- spring onions, chopped – 2 stalks
- white pepper – 1/2 teaspoon
Instructions
- Soak the rice vermicelli noodles in warm water for about 15 minutes or until they are tender, then drain and set aside.
- Heat the sesame oil in a large wok over medium heat. Add the minced garlic and sauté until fragrant but not browned.
- Add the julienned carrots, shredded cabbage, and sliced mushrooms to the wok. Stir-fry for 3-4 minutes until the vegetables are slightly softened.
- Add the drained vermicelli noodles to the wok, tossing gently to incorporate with the vegetables.
- Pour in the soy sauce and light soy sauce, stirring to coat the noodles and vegetables evenly.
- Add the bean sprouts and spring onions, continuing to stir-fry for another 2 minutes.
- Season with white pepper and adjust seasoning to taste. Serve hot.
