Ingredients

  • rice vermicelli noodles – 200 g / 7 oz
  • sesame oil – 2 tablespoons / 30 ml
  • garlic, minced – 2 cloves
  • carrot, julienned – 1 medium / 100 g
  • cabbage, shredded – 1 cup / 75 g
  • mushrooms, sliced – 1 cup / 100 g
  • soy sauce – 3 tablespoons / 45 ml
  • light soy sauce – 1 tablespoon / 15 ml
  • bean sprouts – 1 cup / 100 g
  • spring onions, chopped – 2 stalks
  • white pepper – 1/2 teaspoon

Instructions

  1. Soak the rice vermicelli noodles in warm water for about 15 minutes or until they are tender, then drain and set aside.
  2. Heat the sesame oil in a large wok over medium heat. Add the minced garlic and sauté until fragrant but not browned.
  3. Add the julienned carrots, shredded cabbage, and sliced mushrooms to the wok. Stir-fry for 3-4 minutes until the vegetables are slightly softened.
  4. Add the drained vermicelli noodles to the wok, tossing gently to incorporate with the vegetables.
  5. Pour in the soy sauce and light soy sauce, stirring to coat the noodles and vegetables evenly.
  6. Add the bean sprouts and spring onions, continuing to stir-fry for another 2 minutes.
  7. Season with white pepper and adjust seasoning to taste. Serve hot.
