Ingredients

  • beef chuck roast – 2 pounds / 900 g
  • carrots – 3 medium / 150 g
  • celery stalks – 2 medium / 100 g
  • onions – 2 medium / 200 g
  • garlic cloves – 3 cloves
  • bay leaves – 2
  • black peppercorns – 1 tsp / 5 g
  • chicken broth – 2 cups / 480 ml
  • mustard – 2 tbsp / 30 g
  • sour cream – 1/2 cup / 120 g
  • vegetable oil – 2 tbsp / 30 ml
  • flour – 2 tbsp / 16 g
  • sugar – 1 tbsp / 12 g
  • vinegar – 2 tbsp / 30 ml
  • salt – to taste
  • pepper – to taste

Instructions

  1. Heat the vegetable oil in a large pot or Dutch oven over medium-high heat.
  2. Sear the beef roast on all sides until browned. Remove and set aside.
  3. In the same pot, add chopped carrots, celery, onions, and whole garlic cloves. Sauté until softened.
  4. Return the beef to the pot. Add bay leaves, peppercorns, and chicken broth.
  5. Cover and simmer on low heat for 2-3 hours or until beef is tender.
  6. Remove the beef and set aside, then strain the liquid to separate the vegetables.
  7. Blend vegetables into a smooth puree and return to the pot.
  8. Stir in mustard, sour cream, flour, sugar, vinegar, and additional salt and pepper to the sauce.
  9. Slice the beef and return to the sauce, heating through before serving.
