Ingredients
- Sushi rice – 2 cups / 400 g
- Rice vinegar – 1/3 cup / 80 ml
- Sugar – 2 tablespoons / 28 g
- Salt – 1 teaspoon / 5 g
- Nori sheets – 2 sheets
- Fresh uni (sea urchin) – 4 oz / 120 g
- Soy sauce – for serving
- Wasabi – for serving
Instructions
- Rinse the sushi rice multiple times until the water runs clear.
- Cook the rice according to package instructions or using a rice cooker.
- In a small saucepan, combine rice vinegar, sugar, and salt over low heat until dissolved. Do not boil.
- Once the rice is cooked, transfer it to a large bowl and gently fold in the vinegar mixture. Allow to cool to room temperature.
- Cut the nori sheets into 1-inch wide strips.
- Wet your hands and shape small balls of rice, about 1 oz each, into cylindrical shapes.
- Wrap a strip of nori around the rice ball, leaving the top open, and secure the end of the nori strip by slightly wetting the edge.
- Place a generous portion of uni on top of the rice.
- Serve immediately with soy sauce and wasabi on the side.
