Ingredients

  • Sushi rice – 2 cups / 400 g
  • Rice vinegar – 1/3 cup / 80 ml
  • Sugar – 2 tablespoons / 28 g
  • Salt – 1 teaspoon / 5 g
  • Nori sheets – 2 sheets
  • Fresh uni (sea urchin) – 4 oz / 120 g
  • Soy sauce – for serving
  • Wasabi – for serving

Instructions

  1. Rinse the sushi rice multiple times until the water runs clear.
  2. Cook the rice according to package instructions or using a rice cooker.
  3. In a small saucepan, combine rice vinegar, sugar, and salt over low heat until dissolved. Do not boil.
  4. Once the rice is cooked, transfer it to a large bowl and gently fold in the vinegar mixture. Allow to cool to room temperature.
  5. Cut the nori sheets into 1-inch wide strips.
  6. Wet your hands and shape small balls of rice, about 1 oz each, into cylindrical shapes.
  7. Wrap a strip of nori around the rice ball, leaving the top open, and secure the end of the nori strip by slightly wetting the edge.
  8. Place a generous portion of uni on top of the rice.
  9. Serve immediately with soy sauce and wasabi on the side.
