Tsukimi Soba is a traditional Japanese noodle dish celebrating the beauty of the full moon. Its name ‘tsukimi’ translates to ‘moon viewing,’ and the dish is designed to reflect this theme. Typically enjoyed during fall festivals, it features soba noodles in a flavorful broth topped with a raw or lightly poached egg resembling the moon. This dish hails from the Edo period, where it was popular among the common folk for its simple yet nutritious qualities.

Ingredients

  • soba noodles – 400 g / 14 oz
  • dashi stock – 1 liter / 4 cups
  • soy sauce – 60 ml / 1/4 cup
  • mirin – 60 ml / 1/4 cup
  • sugar – 2 tbsp
  • eggs – 4
  • green onions – 2, finely chopped
  • nori sheets – 2, cut into thin strips

Instructions

  1. Cook soba noodles according to package instructions. Drain and set aside.
  2. In a pot, combine dashi stock, soy sauce, mirin, and sugar. Bring to a gentle simmer.
  3. Place cooked noodles into serving bowls.
  4. Pour the hot broth over the noodles.
  5. Crack an egg over each serving, allowing the heat to slightly poach it.
  6. Garnish with green onions and nori strips before serving.
