Ingredients

  • All-purpose flour – 2 cups / 240 g
  • Eggs – 2 large
  • Mashed potatoes – 2 cups / 450 g
  • Garlic – 2 cloves, minced
  • Fresh parsley – 2 tbsp, chopped
  • Nutmeg – 1/4 tsp
  • Salt – to taste
  • Butter – 4 tbsp / 56 g
  • Parmesan cheese – 1/2 cup / 45 g, grated

Instructions

  1. In a bowl, mix the flour and eggs to form a dough. Knead well, then wrap and let rest for 30 minutes.
  2. For the filling, mix mashed potatoes, garlic, parsley, nutmeg, and salt in a bowl.
  3. Roll out the dough thinly on a floured surface and cut out circles using a pasta cutter.
  4. Place a spoonful of filling on each circle, fold in half, and seal the edges firmly.
  5. Cook tortelli in salted boiling water until they float, about 3-4 minutes.
  6. In a pan, melt butter and add cooked tortelli, tossing them gently to coat.
  7. Serve with a sprinkle of Parmesan cheese on top.
