Ingredients
- ripe tomatoes – 4 large / 500 g
- red onion – 1 medium / 120 g
- green chili – 1 small
- fresh lemon juice – 2 tablespoons / 30 ml
- olive oil – 2 tablespoons / 30 ml
- salt – 1 teaspoon / 5 g
- fresh cilantro – 2 tablespoons, chopped / 8 g
Instructions
- Dice the tomatoes into small cubes and place them in a large mixing bowl.
- Finely chop the red onion and add it to the bowl with the tomatoes.
- Remove the seeds from the green chili, finely chop it, and add to the mixing bowl.
- In a small bowl, whisk together the fresh lemon juice, olive oil, and salt.
- Pour the dressing over the tomato mixture and toss until the salad is well coated.
- Garnish with fresh cilantro and serve immediately.
