Ingredients

  • chicken legs and thighs – 4 whole pieces / 1.25 kg
  • garlic, minced – 4 cloves / 20 g
  • cilantro roots, chopped – 3 roots / 15 g
  • white pepper powder – 1 teaspoon / 2 g
  • fish sauce – 2 tablespoons / 30 ml
  • soy sauce – 1 tablespoon / 15 ml
  • brown sugar – 1 tablespoon / 15 g
  • vegetable oil – 1 tablespoon / 15 ml

Instructions

  1. In a large bowl, mix together the garlic, cilantro roots, white pepper, fish sauce, soy sauce, brown sugar, and vegetable oil to form a marinade.
  2. Add the chicken pieces to the marinade, ensuring each piece is thoroughly coated. Cover and refrigerate for at least 2 hours, preferably overnight.
  3. Preheat a grill to medium-high heat. Grill the chicken for 10-15 minutes on each side, or until the chicken is cooked through and has a golden, crispy skin.
  4. Let the grilled chicken rest for a few minutes before serving. Serve with steamed sticky rice and a side of Nam Jim Jaew (Thai dipping sauce).
