Temarizushi – Classic

Temarizushi, meaning ‘hand ball sushi’, hails from Japan and embodies the elegance of simplicity. Originating from the city’s rich culinary traditions, this dish is known for its visually appealing presentation and ease of preparation. Temarizushi is crafted using small, round portions of sushi rice topped with vibrant slices of fish and vegetables, symbolizing the harmony and beauty often associated with Japanese cuisine.

Ingredients

  • sushi rice – 2 cups / 370 g
  • water – 2 1/4 cups / 540 ml
  • rice vinegar – 1/4 cup / 60 ml
  • sugar – 2 tbsp / 25 g
  • salt – 1 tsp / 5 g
  • tuna sashimi – 8 slices
  • salmon sashimi – 8 slices
  • avocado – 1, sliced thinly
  • sliced cucumber – 8 slices
  • nori sheets – cut into strips
  • wasabi – for serving
  • soy sauce – for serving

Instructions

  1. Rinse the sushi rice under cold water until the water runs clear.
  2. Combine rice and water in a rice cooker and cook according to the manufacturer’s instructions.
  3. In a small saucepan, heat rice vinegar, sugar, and salt until dissolved. Let it cool.
  4. Transfer the cooked rice to a large bowl. Gradually mix in the vinegar mixture, fanning the rice to cool it and give it a glossy finish.
  5. Prepare a bowl of water to keep hands moist.
  6. Take a small portion of rice and form it into a ball using cling film.
  7. Top each ball with a slice of sashimi, avocado, cucumber, or a strip of nori.
  8. Arrange the Temarizushi on a platter and serve with wasabi and soy sauce.
