Tekwan is a delectable traditional fish soup hailing from the Palembang region of Indonesia. This dish is characterized by its warm, delicate broth infused with rich maritime flavors, accompanied by tender fish cakes, vermicelli, and mushroom. Originating as a refined take on local ingredients available in the riverine city, Tekwan gives a tantalizing glimpse into the culinary history of Indonesia. It represents the creative use of freshwater fish, spices, and texture-packed accompaniments to evoke both comfort and delight.

Ingredients

  • white fish fillets – 500 g / 1 lb
  • tapioca flour – 100 g / 1 cup
  • water – 1 liter / 4 cups
  • dried shrimp – 30 g / 1/4 cup
  • shiitake mushrooms – 50 g / 1.75 oz, soaked and sliced
  • vermicelli rice noodles – 100 g / 3.5 oz, soaked
  • garlic – 4 cloves, minced
  • shallots – 3, finely chopped
  • salt – to taste
  • white pepper – 1/2 tsp
  • sugar – 1 tsp
  • scallions – 2, chopped
  • fried onions – for garnish
  • lemon juice – 2 tbsp

Instructions

  1. Blend the fish fillets until smooth. Mix thoroughly with tapioca flour and a pinch of salt until forming a dough.
  2. Form small dough balls and set aside.
  3. Boil water in a pot, add the dough balls, and cook until they float to the surface. Remove with a slotted spoon.
  4. In the same pot, add dried shrimp, sliced shiitake mushrooms, minced garlic, and chopped shallots. Stir until aromatic.
  5. Season with salt, white pepper, and sugar. Add the soaked vermicelli and fish balls back into the soup.
  6. Simmer for another 5 minutes, then add lemon juice and adjust seasoning as needed.
  7. Serve hot with scallions and fried onions sprinkled on top.
