Ingredients
- chicken breast – 1 lb / 450 g, diced
- pork shoulder – 1 lb / 450 g, diced
- cornmeal – 2 cups / 320 g
- chicken broth – 4 cups / 960 ml
- olive oil – 3 tbsp / 45 ml
- onion – 1 large, chopped
- bell pepper – 1 large, chopped
- garlic cloves – 4, minced
- tomatoes – 2 large, diced
- raisins – 1/2 cup / 75 g
- capers – 2 tbsp / 30 g
- annatto powder – 1 tsp / 5 g
- salt – to taste
- black pepper – to taste
Instructions
- Preheat oven to 350°F (175°C).
- In a large skillet, heat olive oil over medium heat. Add onion, bell pepper, garlic, and tomatoes. Sauté until vegetables are soft, about 5 minutes.
- Add diced chicken and pork to the skillet, cooking until browned on all sides.
- Stir in the raisins, capers, annatto powder, salt, and black pepper.
- In a large bowl, mix cornmeal with chicken broth until smooth.
- Combine the meat mixture with the cornmeal mixture and pour into a greased casserole dish.
- Bake in preheated oven for 45-50 minutes or until the top is golden brown and set.
- Let cool slightly before serving.
