Ingredients
- pumpkin – 2 lbs / 900 g, peeled and cubed
- onion – 1 large, diced
- garlic cloves – 3, minced
- ginger – 1-inch piece, grated
- vegetable or chicken broth – 4 cups / 960 ml
- coconut milk – 1 cup / 240 ml
- olive oil – 2 tablespoons
- coriander powder – 1 teaspoon
- cumin powder – 1 teaspoon
- salt – to taste
- black pepper – to taste
- fresh cilantro – for garnish
Instructions
- In a large pot, heat olive oil over medium heat. Add the onion and sauté until translucent, about 5 minutes.
- Add garlic and ginger, cooking for another 2 minutes until fragrant.
- Stir in coriander and cumin powders, coating the onion mixture evenly.
- Add pumpkin cubes, tossing them to combine with the spices.
- Pour in the vegetable or chicken broth, bringing the mixture to a boil.
- Reduce heat and let simmer for 20-25 minutes, or until the pumpkin is tender.
- Use an immersion blender to purée the soup until smooth and creamy.
- Stir in coconut milk, and season with salt and pepper to taste. Heat through for an additional 5 minutes.
- Serve hot, garnished with fresh cilantro.
