Ingredients
- spaghetti – 400 g / 14 oz

- garlic, minced – 2 cloves
- olive oil – 2 tbsp
- white wine – 100 ml / 3.4 fl oz
- fresh parsley, chopped – 2 tbsp
- salt – to taste
- black pepper – to taste
Instructions
- Cook the spaghetti in a large pot of salted boiling water until al dente, as per package instructions. Reserve 1 cup of pasta water before draining.
- In a large pan, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant.
- Remove the sausage from its casing, crumble, and add it to the pan. Cook until browned and cooked through.
- Deglaze the pan with white wine, scraping up any browned bits, and allow the wine to reduce by half.
- Add the cooked spaghetti to the pan, along with the reserved pasta water, if needed, to loosen the sauce. Stir well to combine.
- Mix in the grated pecorino cheese and black truffle, stirring until the cheese is melted and the pasta is evenly coated.
- Season with salt and black pepper to taste. Sprinkle with fresh parsley before serving.
