Spaghetti aglio e olio is a classic Italian pasta dish that originates from the region of Naples. Known for its simplicity and rich flavors, this dish traditionally consists of spaghetti, garlic (aglio), and olive oil (olio). It’s a quintessential example of Italian cuisine’s ability to create complex flavors using minimal ingredients. With the addition of red pepper flakes and parsley, it offers a subtle heat and freshness that make it a beloved staple worldwide.
Ingredients
- spaghetti – 400 g / 14 oz
- extra-virgin olive oil – 1/2 cup / 120 ml
- garlic, thinly sliced – 6 cloves
- red pepper flakes – 1/2 tsp
- fresh parsley, chopped – 1/4 cup / 15 g
- salt – to taste
- freshly ground black pepper – to taste
Instructions
- Bring a large pot of salted water to a boil. Cook the spaghetti according to package instructions until al dente. Reserve 1 cup of the pasta cooking water, then drain the spaghetti.
- In a large skillet over medium heat, combine the olive oil and garlic. Cook, stirring frequently, until the garlic is golden brown and fragrant, about 2 minutes.
- Add the red pepper flakes to the skillet and cook for an additional 30 seconds.
- Add the cooked spaghetti to the skillet, tossing to combine with the garlic oil. If the pasta is too dry, add some reserved pasta water, a tablespoon at a time, until the desired consistency is reached.
- Season the pasta with salt and freshly ground black pepper to taste. Stir in the chopped parsley and serve immediately.
