Ingredients

  • Rice noodles – 14 oz / 400 g
  • Chicken breast – 1 lb / 450 g
  • Tamarind paste – 3 tbsp / 45 g
  • Fish sauce – 3 tbsp / 45 ml
  • Sugar – 2 tbsp / 30 g
  • Garlic cloves, minced – 2 cloves
  • Bird’s eye chilies, chopped – 2
  • Bean sprouts – 1 cup / 100 g
  • Fresh mint leaves – 1/2 cup / 25 g
  • Fresh cilantro leaves – 1/2 cup / 25 g
  • Lime, cut into wedges – 1

Instructions

  1. Boil the rice noodles according to package instructions. Drain and set aside.
  2. In a large pot, bring water to a boil and cook the chicken breast until fully cooked. Remove and shred the chicken.
  3. In a bowl, whisk tamarind paste, fish sauce, sugar, minced garlic, and chopped chilies until well combined.
  4. Combine shredded chicken and sauce in a mixing bowl. Toss noodles in the mixture.
  5. Serve with bean sprouts, fresh mint, and cilantro atop. Accompany with lime wedges for an extra zest.
