Soupe de tectec is a traditional dish from the Seychelles, rich in cultural heritage and reminiscent of the island’s vibrant fishing community. This delightful soup features ‘tectec’, a small shellfish native to the Indian Ocean, commonly found along the pristine beaches of the Seychelles. The dish is celebrated for its simple yet profound flavors, offering a taste of the ocean combined with local herbs and spices, making it a comforting and authentic Seychellois experience.
Ingredients
- tectec shellfish – 500 g
- coconut milk – 1 cup / 240 ml
- onion, finely chopped – 1 medium
- garlic cloves, minced – 2
- fresh ginger, grated – 1 tablespoon
- curry leaves – 6-8 leaves
- fresh cilantro, chopped – 1/4 cup / 10 g
- lime juice – 2 tablespoons
- vegetable stock – 4 cups / 960 ml
- salt – to taste
- black pepper – to taste
Instructions
- Thoroughly clean the tectec shellfish and set aside.
- In a large pot, heat a tablespoon of oil over medium heat. Add the chopped onion and sauté until translucent.
- Add minced garlic, grated ginger, and curry leaves to the pot, stirring for another minute until fragrant.
- Pour in the vegetable stock and bring to a simmer.
- Add the cleaned tectec shellfish to the soup, cooking until they open up, about 5-7 minutes.
- Stir in the coconut milk and lime juice, simmering for an additional 5 minutes.
- Season the soup with salt and black pepper to taste.
- Garnish with fresh cilantro before serving hot.
