Soupe de tectec is a traditional dish from the Seychelles, rich in cultural heritage and reminiscent of the island’s vibrant fishing community. This delightful soup features ‘tectec’, a small shellfish native to the Indian Ocean, commonly found along the pristine beaches of the Seychelles. The dish is celebrated for its simple yet profound flavors, offering a taste of the ocean combined with local herbs and spices, making it a comforting and authentic Seychellois experience.

Ingredients

  • tectec shellfish – 500 g
  • coconut milk – 1 cup / 240 ml
  • onion, finely chopped – 1 medium
  • garlic cloves, minced – 2
  • fresh ginger, grated – 1 tablespoon
  • curry leaves – 6-8 leaves
  • fresh cilantro, chopped – 1/4 cup / 10 g
  • lime juice – 2 tablespoons
  • vegetable stock – 4 cups / 960 ml
  • salt – to taste
  • black pepper – to taste

Instructions

  1. Thoroughly clean the tectec shellfish and set aside.
  2. In a large pot, heat a tablespoon of oil over medium heat. Add the chopped onion and sauté until translucent.
  3. Add minced garlic, grated ginger, and curry leaves to the pot, stirring for another minute until fragrant.
  4. Pour in the vegetable stock and bring to a simmer.
  5. Add the cleaned tectec shellfish to the soup, cooking until they open up, about 5-7 minutes.
  6. Stir in the coconut milk and lime juice, simmering for an additional 5 minutes.
  7. Season the soup with salt and black pepper to taste.
  8. Garnish with fresh cilantro before serving hot.
