Soto Ayam – Classic

Soto Ayam is a traditional Indonesian soup celebrated for its comforting broth and vibrant flavors. Ingredients

  • Chicken – 500 g / 1.1 lbs (bone-in pieces)
  • Water – 8 cups / 1920 ml
  • Turmeric – 1 tsp / 5 g (ground)
  • Garlic – 4 cloves, minced
  • Ginger – 2-inch piece, sliced
  • Lemongrass – 1 stalk, crushed
  • Kaffir lime leaves – 3 leaves
  • Bay leaves – 2 leaves
  • Salt – 2 tsp / 10 g
  • Black pepper – 1/2 tsp / 2 g
  • Rice vermicelli – 100 g / 3.5 oz
  • Bean sprouts – 100 g / 3.5 oz
  • Fried shallots – 2 tbsp / 20 g
  • Boiled eggs – 2 (halved)
  • Coriander leaves – 1/4 cup / 15 g, chopped
  • Lime wedges – To serve

Instructions

  1. In a large pot, combine chicken and water. Bring to a boil, skimming the surface as necessary.
  2. Add turmeric, garlic, ginger, lemongrass, kaffir lime leaves, bay leaves, salt, and pepper. Simmer over low heat for about 45 minutes until chicken is tender.
  3. Remove the chicken, shred the meat, and return bones to the broth to continue simmering for additional flavor.
  4. Meanwhile, prepare rice vermicelli according to package instructions.
  5. Blanch bean sprouts briefly in boiling water.
  6. To serve, place rice vermicelli, bean sprouts, and shredded chicken in bowls. Ladle hot broth over the top.
  7. Garnish with fried shallots, boiled eggs, coriander leaves, and a squeeze of lime.

Substitutions

  • Chicken -> Tofu or tempeh for a vegetarian version
  • Rice vermicelli -> Glass noodles or wheat noodles
