Ingredients
- Chicken – 500 g / 1.1 lbs (bone-in pieces)
- Water – 8 cups / 1920 ml
- Turmeric – 1 tsp / 5 g (ground)
- Garlic – 4 cloves, minced
- Ginger – 2-inch piece, sliced
- Lemongrass – 1 stalk, crushed
- Kaffir lime leaves – 3 leaves
- Bay leaves – 2 leaves
- Salt – 2 tsp / 10 g
- Black pepper – 1/2 tsp / 2 g
- Rice vermicelli – 100 g / 3.5 oz
- Bean sprouts – 100 g / 3.5 oz
- Fried shallots – 2 tbsp / 20 g
- Boiled eggs – 2 (halved)
- Coriander leaves – 1/4 cup / 15 g, chopped
- Lime wedges – To serve
Instructions
- In a large pot, combine chicken and water. Bring to a boil, skimming the surface as necessary.
- Add turmeric, garlic, ginger, lemongrass, kaffir lime leaves, bay leaves, salt, and pepper. Simmer over low heat for about 45 minutes until chicken is tender.
- Remove the chicken, shred the meat, and return bones to the broth to continue simmering for additional flavor.
- Meanwhile, prepare rice vermicelli according to package instructions.
- Blanch bean sprouts briefly in boiling water.
- To serve, place rice vermicelli, bean sprouts, and shredded chicken in bowls. Ladle hot broth over the top.
- Garnish with fried shallots, boiled eggs, coriander leaves, and a squeeze of lime.
