- cabbage – 1/2 head, shredded
- vegetable broth – 1 litre / 4 cups
- salt – to taste
- black pepper – to taste
- paprika – 1 teaspoon
- parsley – a handful, chopped
Instructions
- Cut the stale bread into thin slices and set aside.
- Heat olive oil in a large pot over medium heat. Add chopped onion and garlic, and sauté until translucent.
- Add green bell pepper, tomatoes, and cabbage; cook until the vegetables soften.
- Pour in the vegetable broth and bring to a gentle simmer.
- Season with salt, black pepper, and paprika.
- Carefully distribute the bread slices over the top of the simmering vegetables.
