Ingredients

  • stale rustic bread – 200 g / 7 oz
  • olive oil – 4 tablespoons / 60 ml
  • onion – 1 large, chopped
  • garlic cloves – 2, minced
  • green bell pepper – 1, chopped
  • tomatoes – 2, chopped
  • cabbage – 1/2 head, shredded
  • vegetable broth – 1 litre / 4 cups
  • salt – to taste
  • black pepper – to taste
  • paprika – 1 teaspoon
  • parsley – a handful, chopped

Instructions

  1. Cut the stale bread into thin slices and set aside.
  2. Heat olive oil in a large pot over medium heat. Add chopped onion and garlic, and sauté until translucent.
  3. Add green bell pepper, tomatoes, and cabbage; cook until the vegetables soften.
  4. Pour in the vegetable broth and bring to a gentle simmer.
  5. Season with salt, black pepper, and paprika.
  6. Carefully distribute the bread slices over the top of the simmering vegetables.
  7. Cover and let it cook on low heat until the bread absorbs the broth and becomes soft.
  8. Garnish with freshly chopped parsley before serving.
