This hearty dish is a staple in Salvadoran cuisine, known for its ability to comfort and nourish, especially during festive gatherings and family meals.

Ingredients

  • native hen (gallina india) – 2 kg / 4.4 lbs
  • water – 4 liters / 16 cups
  • onion – 1 large, chopped
  • garlic cloves – 4, minced
  • carrots – 3, sliced
  • green bell pepper – 1, chopped
  • corn cobs – 2, cut into thirds
  • green plantains – 2, peeled and sliced
  • yam – 1 medium, peeled and cubed
  • fresh cilantro – 1 bunch, chopped
  • tomatoes – 2, diced
  • salt – to taste
  • black pepper – to taste

Instructions

  1. In a large pot, add the water and bring it to a boil.
  2. Add the hen and reduce the heat to a simmer. Cook for about 2 hours until the meat is tender.
  3. Skim off any foam that forms on the surface throughout cooking.
  4. Add the onion, garlic, carrots, bell pepper, corn, plantains, and yam to the pot.
  5. Simmer for another 30–40 minutes until the vegetables are tender.
  6. Add tomatoes and cilantro, stirring to combine.
  7. Season with salt and pepper to taste. Serve the soup hot.
