Ingredients

  • fresh chestnuts – 500 g / 1.1 lbs, peeled and cooked
  • olive oil – 2 tablespoons
  • onion – 1 medium, chopped
  • garlic cloves – 2, minced
  • leek – 1, sliced
  • carrot – 1 large, diced
  • celery stalk – 1, chopped
  • vegetable broth – 1 liter / 4 cups
  • bay leaf – 1
  • salt – to taste
  • black pepper – to taste
  • fresh thyme – 1 teaspoon, chopped

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onion and garlic, sautéing until soft and translucent.
  2. Add the leek, carrot, and celery, cooking for an additional 5 minutes until they begin to soften.
  3. Introduce the cooked chestnuts to the pot, stirring to combine with the vegetables.
  4. Pour in the vegetable broth and add the bay leaf. Season with salt and black pepper.
  5. Bring the soup to a boil, then reduce the heat to a simmer, allowing it to cook for about 20 minutes.
  6. Remove the bay leaf and use an immersion blender to puree the soup until smooth and creamy.
  7. Stir in the fresh thyme and adjust seasoning as desired. Serve hot.
