Soda bread farl – Classic
This is the traditional, time-tested version of the dish. It stays true to its origins, using well-established techniques and ingredients that define its authentic flavor. A perfect starting point for exploring its evolution.
Soda bread farl is a traditional Irish bread hailing from Northern Ireland, renowned for its simplicity and robust flavor. Originally a staple in Irish households, it is made without yeast, leveraging the reaction between baking soda and the acidity of buttermilk to achieve its rise. Typically shaped into a round disc and quartered into ‘farls’, which means ‘fourths’ in Gaelic, it is griddled rather than baked, giving it a unique texture. Despite its humble ingredients, a well-made soda bread farl is a perfect accompaniment to stews, soups, or a hearty Irish breakfast.
Ingredients
- all-purpose flour – 500 g / 4 cups
- baking soda – 1 teaspoon
- salt – 1 teaspoon
- buttermilk – 400 ml / 1.75 cups
Instructions
- In a large mixing bowl, combine the flour, baking soda, and salt.
- Make a well in the center and pour in the buttermilk, mixing quickly with a fork until a soft dough forms.
- Turn the dough onto a floured surface and knead lightly—do not over-knead as it can make the farls tough.
- Shape the dough into a round disc about 1 inch thick.
- Cut the disc into quarters to form four farls.
- Dust a heavy-based frying pan or griddle with flour and place it over medium heat.
- Cook each farl for about 10-15 minutes per side until golden brown and cooked through. Check for doneness by inserting a skewer—if it comes out clean, the farls are ready.
- Cool slightly on a wire rack before serving.
Substitutions
- all-purpose flour -> whole wheat flour
