Ingredients
- potatoes – 6 medium / 900 g
- onion – 1 large / 220 g
- garlic cloves – 3 / 15 g
- olive oil – 2 tbsp / 30 ml
- kale or Swiss chard – 200 g
- vegetable broth – 4 cups / 960 ml
- bay leaf – 1
- caraway seeds – 1 tsp / 2 g
- salt – to taste
- black pepper – to taste
Instructions
- Peel and chop the potatoes into bite-sized pieces. Set aside.
- Finely chop the onion and garlic.
- In a large pot, heat olive oil over medium heat. Add the onion and sauté until translucent, about 5 minutes.
- Add garlic and continue to sauté for another minute until fragrant.
- Stir in the potatoes and cook for about 5 minutes, allowing them to absorb the flavors.
- Add the kale and mix well.
- Pour in the vegetable broth and add the bay leaf and caraway seeds.
- Bring the stew to a boil, then reduce the heat to low and let it simmer for about 30 minutes, or until the potatoes are tender.
- Season with salt and black pepper to taste.
- Remove the bay leaf before serving.
