Sólet is a traditional Hungarian-Jewish stew, deeply enriched with a history dating back to Ashkenazi Jewish communities in Central Europe. Ingredients

  • dried navy beans – 1 cup / 200 g
  • pearl barley – 1/2 cup / 100 g
  • smoked pork ribs – 500 g
  • onions, diced – 2 medium / 250 g
  • garlic cloves, minced – 4 cloves
  • paprika – 2 tablespoons
  • olive oil – 3 tablespoons
  • bay leaves – 2 leaves
  • water or chicken broth – 6 cups / 1.5 liters
  • salt – to taste
  • black pepper – to taste

Instructions

  1. Rinse and soak the dried navy beans overnight in plenty of water.
  2. In a large pot, heat olive oil over medium heat. Add the diced onions and garlic, sautéing until translucent.
  3. Add the smoked pork ribs to the pot, searing them briefly on each side.
  4. Stir in the paprika, ensuring it coats the onions and ribs.
  5. Drain the soaked beans and add to the pot along with pearl barley, bay leaves, and water or chicken broth.
  6. Season with salt and black pepper to taste. Bring to a boil, then reduce to a simmer.
  7. Cover and cook on low heat for about 2 hours, stirring occasionally, until beans are tender and the stew is richly flavored.
