Siri Paya is a traditional Pakistani stew, deeply rooted in the country’s culinary heritage. Originating from the Punjab and Sindh regions, this dish is revered for its rich, aromatic flavors and hearty texture. It is typically prepared using goat or sheep’s head and trotters (‘siri’ and ‘paya’, respectively) and is often enjoyed during festive occasions and large family gatherings. Ingredients
- goat or sheep trotters – 4 pieces / 1.5 kg
- goat or sheep head – 1 piece / 1 kg
- onions – 2 large / 300 g
- tomatoes – 4 medium / 400 g
- ginger paste – 2 tbsp / 30 g
- garlic paste – 2 tbsp / 30 g
- cooking oil – 1/2 cup / 120 ml
- cumin seeds – 1 tsp / 5 g
- red chili powder – 2 tsp / 10 g
- turmeric powder – 1 tsp / 5 g
- salt – to taste
- coriander powder – 1 tsp / 5 g
- whole spices (cinnamon, cardamom, cloves) – 1 tbsp / 15 g
- fresh coriander leaves – for garnish
- water – 8 cups / 2 liters
- lemon wedges – for serving
Instructions
- Thoroughly clean the head and trotters, removing any hair and impurities.
- In a large pot, heat oil over medium heat. Add cumin seeds and whole spices, sauté until fragrant.
- Add onions and sauté until golden brown.
- Stir in ginger and garlic paste, and cook for a minute.
- Add tomatoes, red chili powder, turmeric, coriander powder, and salt. Cook until the tomatoes break down and the oil separates.
- Add the head and trotters to the pot, stirring to coat with the spice mixture.
- Pour in water, bring to a boil, then cover and simmer for 3-4 hours until the meat is tender.
- Garnish with fresh coriander leaves and serve hot with lemon wedges.
