Senafich is a bold and spicy Ethiopian mustard sauce, traditionally served alongside various local dishes to add an extra kick. Known for its unique combination of fiery mustard and other spices, Senafich holds a revered spot in Ethiopian cuisine. It is typically enjoyed with dishes such as kitfo, a seasoned raw beef dish, or added as a condiment to injera, a type of sourdough flatbread that forms the foundation of Ethiopian meals. The origins of Senafich take us back to the culinary heart of Ethiopia, where mustard seeds are combined with turmeric and cardamom to create this distinct sauce with complex flavors.

Ingredients

  • Yellow mustard seeds – 1/2 cup / 50 g
  • White vinegar – 1/4 cup / 60 ml
  • Water – 1/4 cup / 60 ml
  • Turmeric powder – 1 tsp / 5 g
  • Ground cardamom – 1/2 tsp / 2 g
  • Salt – 1/2 tsp / 3 g
  • Sugar – 1 tsp / 5 g

Instructions

  1. Grind the yellow mustard seeds into a fine powder using a spice grinder or mortar and pestle.
  2. In a mixing bowl, combine the ground mustard seeds with white vinegar and water. Stir until smooth.
  3. Add turmeric powder, ground cardamom, salt, and sugar to the mixture. Mix well until all the ingredients are fully incorporated.
  4. Allow the mixture to sit at room temperature for at least 1 hour to let the flavors meld. For best results, refrigerate overnight.
  5. Before serving, stir the sauce well and adjust seasoning to taste if necessary.

Substitutions

  • Yellow mustard seeds -> Brown mustard seeds
  • White vinegar -> Apple cider vinegar

Enhancements in the Next Evolution

  • Add a pinch of freshly ground black pepper for additional heat.
  • Incorporate a tablespoon of minced garlic for more depth of flavor.
  • Try using lemon juice instead of vinegar for a tangy twist.
