Ingredients
- Chicken thighs – 600g / 1.3 lb
- Sweet soy sauce (kecap manis) – 1/2 cup / 120ml
- Onion, finely sliced – 1 large
- Garlic cloves, minced – 3 cloves
- Ginger, grated – 1 tablespoon / 15g
- Cinnamon stick – 1 stick
- Cloves – 4 whole
- Nutmeg, ground – 1/4 teaspoon
- Black peppercorns – 1/2 teaspoon, crushed
- Tomatoes, chopped – 2 medium
- Potatoes, peeled and cubed – 2 large
- Water – 2 cups / 480ml
- Salt – to taste
- Oil – 2 tablespoons / 30ml
Instructions
- Heat oil in a large pot over medium heat.
- Add the sliced onions and sauté until golden brown.
- Stir in the garlic and ginger, cooking until fragrant.
- Add chicken pieces and cook until browned on all sides.
- Pour in the sweet soy sauce and water, stirring well.
- Add cinnamon, cloves, nutmeg, and crushed peppercorns.
- Mix in the tomatoes and cubed potatoes.
- Bring to a boil, then reduce heat and let simmer for about 45 minutes, or until chicken is tender and sauce is thickened.
- Season with salt to taste before serving.
