Ingredients

  • Coconut Milk – 400 ml / 1.7 cups
  • Water – 500 ml / 2 cups
  • Eggplants – 150 g / 1 cup, chopped
  • Carrots – 100 g / 2 medium, sliced
  • Green Beans – 100 g / 1 cup, trimmed and cut
  • Cabbage – 100 g / 1 cup, chopped
  • Tofu – 200 g / 1 block, cubed
  • Red Chilies – 2, sliced
  • Shallots – 3, thinly sliced
  • Garlic – 3 cloves, minced
  • Galangal – 2 cm piece, sliced
  • Lemongrass – 1 stalk, bruised
  • Bay Leaves – 2
  • Salt – to taste
  • Palm Sugar – 1 tsp
  • Vegetable Oil – 2 tbsp

Instructions

  1. Heat vegetable oil in a pot and sauté shallots and garlic until fragrant.
  2. Add red chilies, galangal, and lemongrass, cook for another minute.
  3. Pour in coconut milk and water, stirring to combine.
  4. Add eggplants, carrots, green beans, and cabbage. Simmer for 15 minutes.
  5. Add tofu, bay leaves, salt, and palm sugar. Simmer for another 10 minutes until vegetables are tender.
  6. Adjust seasoning with salt and more palm sugar if desired before serving.

Substitutions

  • Coconut Milk -> Almond Milk with a splash of coconut essence
  • Eggplants -> Zucchini
  • Palm Sugar -> Brown Sugar
