Ingredients
- olive oil – 2 tablespoons / 30 ml
- onion, finely chopped – 1 medium / 150 g
- garlic cloves, minced – 2 cloves / 10 g
- carrot, finely chopped – 1 medium / 100 g
- celery stalk, diced – 1 stalk / 100 g
- canned whole tomatoes – 28 oz / 800 g
- tomato paste – 2 tablespoons / 30 g
- bay leaf – 1
- dried thyme – 1 teaspoon / 1 g
- sugar – 1 teaspoon / 4 g
- salt – to taste
- black pepper – to taste
- fresh basil leaves, chopped – a few leaves / 5 g (optional for garnish)
Instructions
- Heat olive oil in a large saucepan over medium heat.
- Add the finely chopped onion, garlic, carrot, and celery. Sauté until the vegetables are soft and fragrant, about 8 minutes.
- Stir in the canned tomatoes, breaking them up with a spoon. Add tomato paste, bay leaf, thyme, and sugar.
- Bring to a boil, then reduce the heat and simmer gently for 40-45 minutes, stirring occasionally, until the sauce has thickened.
- Season with salt and black pepper to taste. Remove bay leaf before serving.
- Garnish with fresh basil if desired.
