Sate ponorogo – Classic

Sate Ponorogo is a specialty of Ponorogo, a regency in East Java, Indonesia. This dish features skewered and grilled marinated chicken, known for its succulent texture and rich, smoky flavor enhanced by a sweet and savory peanut sauce. Unlike other Indonesian sate, which often uses turmeric, Sate Ponorogo is distinguished by its use of a unique marinade and its traditional cooking method over an open flame on coconut husk charcoal, lending a distinct aroma and taste.

Ingredients

  • chicken thighs, boneless and skinless – 500 g
  • peanut butter – 1/2 cup / 120 g
  • sweet soy sauce (kecap manis) – 1/4 cup / 60 ml
  • garlic, minced – 4 cloves
  • shallots, minced – 4
  • fresh galangal, minced – 1 tablespoon / 6 g
  • coconut milk – 1/2 cup / 120 ml
  • lime juice – 2 tablespoons / 30 ml
  • brown sugar – 2 tablespoons / 28 g
  • chili paste – 1 tablespoon / 15 g
  • salt – 1 teaspoon / 5 g

Instructions

  1. Cut the chicken thighs into bite-sized pieces.
  2. In a large bowl, mix peanut butter, sweet soy sauce, garlic, shallots, galangal, coconut milk, lime juice, brown sugar, chili paste, and salt until well combined.
  3. Add chicken pieces to the marinade, ensuring they are thoroughly coated. Cover and refrigerate for at least 3 hours, or overnight for best results.
  4. Soak wooden skewers in water for 30 minutes to prevent burning.
  5. Thread the marinated chicken pieces onto the skewers.
  6. Preheat a grill to medium-high heat. Grill the chicken skewers for 5-7 minutes per side, or until the chicken is cooked through and slightly charred.
  7. Serve the skewers hot with extra sweet soy sauce and a side of rice or lontong (rice cakes).
