Satatsuri is a traditional Georgian soup known for its heartwarming and flavorful composition. Originating from the lush and fertile regions of Georgia, this soup brings together the rich Georgian culinary tradition of using fresh herbs and spices to craft comforting and soulful dishes. Ingredients

  • chicken thighs – 4 pieces / approx. 600 g
  • onion – 1 large / 200 g, chopped
  • garlic cloves – 4 cloves, minced
  • carrot – 1 medium / 100 g, diced
  • celery stalks – 2 / 100 g, chopped
  • potatoes – 3 medium / 300 g, cubed
  • fresh parsley – 1 bunch / 30 g, chopped
  • fresh dill – 1 bunch / 30 g, chopped
  • bay leaves – 2 leaves
  • salt – 2 tsp / 10 g
  • black pepper – 1 tsp / 5 g, freshly ground
  • water – 6 cups / 1.5 liters

Instructions

  1. 1. In a large pot, bring 6 cups of water to a boil.
  2. 2. Add chicken thighs, reduce heat, and simmer for 15 minutes.
  3. 3. Skim off any foam, then add onion, garlic, carrot, and celery. Simmer for an additional 20 minutes.
  4. 4. Add potatoes, bay leaves, salt, and pepper. Cook until potatoes are tender, about 15-20 minutes.
  5. 5. Stir in parsley and dill. Adjust seasoning to taste. Remove bay leaves before serving.
  6. 6. Serve hot, garnished with additional fresh herbs if desired.

Substitutions

  • chicken thighs -> turkey pieces
  • fresh dill -> fresh cilantro
