Sarapatel is a traditional Portuguese stew, which traces its origins to the Alentejo region. Known for its robust and daring flavors, Sarapatel combines a variety of meats, typically offal, with a spice-infused sauce characteristic of Portuguese and Goan culinary traditions. Ingredients

  • pork liver – 500 g / 1 lb
  • pork heart – 250 g / 8.8 oz
  • pork meat with some fat – 500 g / 1 lb
  • white vinegar – 1 cup / 240 ml
  • onion, finely chopped – 1 large / 150 g
  • tomato, chopped – 2 medium / 300 g
  • garlic cloves, minced – 4 cloves / 20 g
  • fresh ginger, grated – 1 tbsp / 15 g
  • black pepper – 1 tsp / 5 g
  • cayenne pepper – 1 tsp / 5 g
  • turmeric powder – 1/2 tsp / 2.5 g
  • ground cumin – 1 tsp / 5 g
  • salt – to taste
  • bay leaf – 2 leaves
  • water – 2 cups / 480 ml
  • fresh coriander leaves, chopped – for garnish
  • oil – 3 tbsp / 45 ml

Instructions

  1. Wash and cut the pork liver, heart, and meat into bite-sized pieces. Soak them in vinegar for at least 1 hour to remove any strong odors.
  2. In a large pot, heat oil over medium heat. Add onions and sauté until translucent.
  3. Add garlic, ginger, bay leaves, and spices (black pepper, cayenne, turmeric, cumin) and sauté for another minute until fragrant.
  4. Stir in the tomatoes and cook until they start to soften.
  5. Add the soaked meat pieces, including the vinegar, and mix well. Cook until the meat is browned.
  6. Pour in water, add salt, and bring to a boil. Reduce heat, cover, and simmer for about 1.5 to 2 hours, stirring occasionally.
  7. Taste and adjust seasoning. Garnish with fresh coriander leaves before serving.
