Ingredients

  • Fresh carp fillets – 4 fillets / 800 g
  • Water – 2 cups / 480 ml
  • Sea salt – 1 tablespoon / 18 g
  • Black peppercorns – 1 teaspoon / 5 g
  • Bay leaf – 1 leaf
  • Garlic cloves – 4 cloves, minced
  • Bell pepper – 1, chopped
  • Tomatoes – 2, diced
  • Hot paprika – 1 teaspoon / 2 g
  • Fresh parsley – A handful, chopped
  • Lemon juice – 2 tablespoons / 30 ml

Instructions

  1. Prepare the brine by combining water, sea salt, black peppercorns, and bay leaf in a pot. Bring to a boil, then remove from heat and let it cool to room temperature.
  2. Preheat the grill to medium heat. Brush the carp fillets with olive oil and sprinkle with salt.
  3. Grill the fillets for 5-7 minutes on each side until they are slightly charred and cooked through.
  4. In a separate pot, sauté minced garlic, chopped bell pepper, and diced tomatoes over medium heat until soft.
  5. Add hot paprika to the vegetable mix, then pour in the cooled brine.
  6. Simmer for 10 minutes to let flavors merge, then add grilled fish.
  7. Allow the fish to absorb the flavors for another 5 minutes.
  8. Finish with lemon juice and a generous scattering of fresh parsley before serving.
