Sarajevski ćevapi – Classic

Sarajevski ćevapi is a celebrated meat dish originating from the heart of Sarajevo, Bosnia and Herzegovina. These small, grilled minced meat sausages are a staple in Balkan cuisine, notable for their rich and robust flavor, traditionally served with somun (a type of flatbread), chopped onions, and a side of tangy sour cream. This dish captures the essence of the region’s culinary diversity and its passion for grilled meats.

Ingredients

  • Ground beef – 500 g / 1.1 lbs
  • Ground lamb – 250 g / 0.5 lbs
  • Onion – 1 medium, finely chopped
  • Garlic cloves – 2, minced
  • Salt – 1 tsp
  • Black pepper – 1 tsp
  • Baking soda – 1/2 tsp
  • Paprika – 1 tsp
  • Water – 50 ml / 3 tbsp
  • Somun (flatbread) – 4 pieces
  • Small onion – 1, chopped
  • Sour cream – 100 ml / 1/2 cup

Instructions

  1. In a large bowl, combine the ground beef and lamb thoroughly.
  2. Mix in the finely chopped onion, minced garlic, salt, black pepper, baking soda, and paprika.
  3. Gradually add the water while mixing until the meat mixture becomes well-incorporated and smooth.
  4. Refrigerate the mixture for at least 1 hour to let the flavors meld.
  5. Shape the meat into small sausages, about the size of a thumb.
  6. Preheat a grill to medium-high heat and grill the ćevapi for 8-10 minutes, turning frequently until browned and cooked through.
  7. Serve the ćevapi inside fresh somun bread, with chopped onions and a dollop of sour cream on the side.
