Ingredients
- Smoked sausage – 500 g / 1.1 lbs
- White beans – 2 cups / 400 g, soaked overnight
- Onion – 1 large, finely chopped
- Garlic cloves – 3, minced
- Tomatoes – 3 medium, chopped
- Vegetable oil – 2 tbsp / 30 ml
- Chicken broth – 3 cups / 720 ml
- Bay leaf – 1
- Salt – to taste
- Black pepper – to taste
- Fresh parsley – for garnish
Instructions
- Heat the vegetable oil in a large pot over medium heat. Add the onions and garlic, sautéing until soft and translucent.
- Add the smoked sausage slices to the pot and cook until browned on all sides.
- Stir in the chopped tomatoes and cook until they begin to break down, about 5 minutes.
- Add the soaked white beans and chicken broth to the pot along with the bay leaf. Bring the mixture to a boil.
- Reduce heat to a simmer, cover the pot, and let it cook for about 1 to 1.5 hours or until the beans are tender.
- Season with salt and black pepper to taste. Remove the bay leaf before serving.
- Garnish with freshly chopped parsley.
