Ingredients

  • Red chili peppers – 10 pieces / 100 g
  • Terasi (fermented shrimp paste) – 1 tablespoon / 20 g
  • Garlic cloves – 4 cloves / 20 g
  • Shallots – 3 small / 60 g
  • Tomato – 1 medium / 150 g
  • Salt – 1 teaspoon / 5 g
  • Sugar – 1 tablespoon / 15 g
  • Oil (vegetable or coconut) – 2 tablespoons / 30 ml
  • Lime juice – 1 tablespoon / 15 ml

Instructions

  1. Roast the red chili peppers, shallots, and garlic in a pan without oil until softened and lightly charred.
  2. In the same pan, toast the terasi until aromatic.
  3. Blend the roasted peppers, garlic, shallots, terasi, and tomato until smooth.
  4. Heat the oil in a pan over medium heat and sauté the mixture for about 10 minutes, stirring continuously.
  5. Add salt and sugar, adjusting to taste, and cook for an additional 5 minutes.
  6. Finish with lime juice, mixing well before cooling and serving.

Substitutions

  • Red chili peppers -> Red bell peppers for less heat
  • Terasi -> Fish sauce, used sparingly
  • Vegetable oil -> Olive oil
