Ingredients

  • mixed salad greens – 150 g / 5 oz
  • duck gizzards – 200 g / 7 oz, cooked and sliced
  • duck hearts – 100 g / 3.5 oz, cooked and sliced
  • fresh foie gras – 100 g / 3.5 oz, seared
  • cherry tomatoes – 200 g / 7 oz, halved
  • walnuts – 50 g / 1.8 oz, toasted
  • shallot – 1 small, finely chopped
  • Dijon mustard – 1 tbsp / 15 g
  • red wine vinegar – 2 tbsp / 30 ml
  • olive oil – 4 tbsp / 60 ml
  • salt – to taste
  • freshly ground black pepper – to taste

Instructions

  1. In a small bowl, whisk together Dijon mustard, red wine vinegar, olive oil, salt, and pepper to make the vinaigrette.
  2. In a large salad bowl, combine mixed greens, cherry tomatoes, sliced duck gizzards, duck hearts, and walnuts.
  3. Drizzle the vinaigrette over the salad and toss gently to combine.
  4. Top the salad with slices of seared foie gras.
  5. Garnish with finely chopped shallots.
