Ingredients

  • octopus – 2 lbs / 900 g
  • lemon – 2 large, juiced
  • olive oil – 1/4 cup / 60 ml
  • red wine vinegar – 2 tbsp / 30 ml
  • garlic cloves – 3, minced
  • red onion – 1, thinly sliced
  • oregano – 1 tsp / 1 g, dried
  • parsley – 1/4 cup / 15 g, chopped
  • capers – 2 tbsp / 20 g
  • black olives – 1/4 cup / 35 g, sliced
  • salt – to taste
  • pepper – to taste

Instructions

  1. Clean the octopus under cold running water. Remove and discard the beak.
  2. In a large pot, bring water to a boil. Add the octopus and simmer for about 45 minutes or until tender.
  3. Once cooked, remove the octopus from the pot and let it cool. Cut into bite-sized pieces.
  4. In a bowl, whisk together lemon juice, olive oil, red wine vinegar, and minced garlic to make the vinaigrette.
  5. In a large salad bowl, combine octopus, red onion, oregano, parsley, capers, and black olives.
  6. Pour the vinaigrette over the salad and toss to coat.
  7. Season with salt and pepper to taste. Chill in the refrigerator for at least 1 hour before serving.
