Ingredients

  • Coconut milk – 2 cups / 480 ml
  • Mackerel fillets – 1 lb / 450 g
  • Onion – 1 large, diced
  • Garlic cloves – 3, minced
  • Scotch bonnet pepper – 1, seeded and chopped
  • Thyme – 2 sprigs
  • Tomato – 2 large, chopped
  • Bell pepper – 1, sliced
  • Lime juice – 2 tbsp
  • Salt – to taste
  • Black pepper – 1 tsp
  • Vegetable oil – 2 tbsp

Instructions

  1. Heat vegetable oil in a large pot over medium heat.
  2. Add onions and garlic; sauté until onions are translucent.
  3. Stir in the coconut milk, thyme, Scotch bonnet pepper, tomatoes, and bell pepper. Bring to a simmer.
  4. Season with salt and black pepper.
  5. Add the mackerel fillets and ensure they are submerged in the coconut mixture.
  6. Cover the pot and allow the stew to cook on low heat for about 30 minutes.
  7. Squeeze lime juice over the stew and stir just before serving.
