Roti buaya – Classic

Roti Buaya, a delightful and unique pastry holds a special place in Indonesian culture. Traditionally served at Betawi weddings, it symbolizes fidelity and wealth. This sweet bread, shaped like a crocodile, boasts a soft and fluffy texture with a hint of vanilla sweetness, making it a symbolic and delicious treat.

Ingredients

  • All-purpose flour – 500 g / 4 cups
  • Granulated sugar – 100 g / 1/2 cup
  • Instant yeast – 10 g / 1 tablespoon
  • Salt – 5 g / 1 teaspoon
  • Milk – 250 ml / 1 cup
  • Unsalted butter – 75 g / 1/3 cup
  • Eggs – 2, lightly beaten
  • Chocolate spread – 100 g / 1/2 cup

Instructions

  1. In a large bowl, mix the flour, sugar, yeast, and salt.
  2. Warm the milk and melt the butter in it. Allow it to cool slightly.
  3. Create a well in the flour mixture, pour in the milk-melted butter mixture, and add the eggs.
  4. Mix until a dough forms, then knead on a floured surface for about 10 minutes until smooth and elastic.
  5. Let the dough rise in an oiled bowl, covered, for about 1 hour or until doubled.
  6. Punch down the dough and divide it into two portions. Shape one piece into a crocodile body and the other into a head and tail.
  7. Fill the body with chocolate spread and seal securely.
  8. Pinch scales into the dough using scissors and shape the head to include ‘eyes’ with small dough balls.
  9. Preheat the oven to 180°C (350°F). Place the shaped bread on a baking sheet, let it rise for 30 minutes.
  10. Bake for 25-30 minutes until golden brown. Cool before serving.
