Roti buaya – Classic

Roti Buaya, a delightful and unique pastry holds a special place in Indonesian culture. Traditionally served at Betawi weddings, it symbolizes fidelity and wealth. Ingredients
- All-purpose flour – 500 g / 4 cups
- Granulated sugar – 100 g / 1/2 cup
- Instant yeast – 10 g / 1 tablespoon
- Salt – 5 g / 1 teaspoon
- Milk – 250 ml / 1 cup
- Unsalted butter – 75 g / 1/3 cup
- Eggs – 2, lightly beaten
- Chocolate spread – 100 g / 1/2 cup
Instructions
- In a large bowl, mix the flour, sugar, yeast, and salt.
- Warm the milk and melt the butter in it. Allow it to cool slightly.
- Create a well in the flour mixture, pour in the milk-melted butter mixture, and add the eggs.
- Mix until a dough forms, then knead on a floured surface for about 10 minutes until smooth and elastic.
- Let the dough rise in an oiled bowl, covered, for about 1 hour or until doubled.
- Punch down the dough and divide it into two portions. Shape one piece into a crocodile body and the other into a head and tail.
- Fill the body with chocolate spread and seal securely.
- Pinch scales into the dough using scissors and shape the head to include ‘eyes’ with small dough balls.
- Preheat the oven to 180°C (350°F). Place the shaped bread on a baking sheet, let it rise for 30 minutes.
- Bake for 25-30 minutes until golden brown. Cool before serving.
