Rostbraten is a sumptuous and traditional German meat dish, celebrated for its rich flavor and historical roots in Southern Germany, especially in Swabia and Bavaria. Known for its tender cuts of beef and sumptuous sauce, this dish captures the essence of German culinary practices, where hearty meals are crafted to savor the robust flavor of the meat. Traditionally served with caramelized onions and a hint of mustard or wine in the sauce, Rostbraten is a testament to the artisanal skills of German cooks, providing warmth and comfort especially during the cooler months.

Ingredients

  • beef steaks – 4 pieces, approx. 200 g each
  • salt – 1 teaspoon
  • black pepper – 1 teaspoon, freshly ground
  • vegetable oil – 2 tablespoons
  • butter – 2 tablespoons
  • onions – 3 medium, thinly sliced
  • beef broth – 1 cup / 240 ml
  • dry red wine – 1/2 cup / 120 ml
  • Dijon mustard – 2 tablespoons
  • parsley – 2 tablespoons, chopped

Instructions

  1. Season the beef steaks with salt and freshly ground black pepper on both sides.
  2. Heat vegetable oil in a large skillet over medium-high heat.
  3. Sear the steaks for about 3-4 minutes on each side or until desired doneness. Remove and set aside.
  4. In the same pan, add butter and melt. Add the sliced onions and sauté until golden brown and caramelized.
  5. Pour in the beef broth and red wine to deglaze the pan, scraping up any browned bits.
  6. Stir in Dijon mustard and bring the mixture to a simmer.
  7. Return the beef steaks to the skillet, spoon some of the sauce over them, and warm through for about 2-3 minutes.
  8. Garnish with chopped parsley and serve immediately.

Substitutions

  • dry red wine -> extra beef broth or grape juice
  • Dijon mustard -> yellow mustard or grainy mustard

Enhancements in the Next Evolution

  • Marinate the beef steaks in red wine and herbs for a few hours before cooking for a more intense flavor.
  • Add a pinch of sugar while caramelizing onions to enhance their sweetness.
  • Include a dash of balsamic vinegar to the sauce for extra depth.
