Ingredients

  • whole chicken – 1.5 kg / 3.3 lb
  • water – 3.5 liters / 14 cups
  • carrots – 2 large, peeled and sliced
  • parsley root – 1 large, peeled and sliced
  • leeks – 1 medium, washed and sliced
  • celery root – 1 small, peeled and cubed
  • onion – 1 large, halved and roasted
  • black peppercorns – 1 tsp
  • bay leaves – 2
  • fresh parsley – a small bunch
  • salt – to taste

Instructions

  1. Place the chicken in a large pot and cover with 3.5 liters of water. Bring to a boil.
  2. Reduce the heat and skim off any foam. Add the carrots, parsley root, leeks, celery root, roasted onion, black peppercorns, and bay leaves.
  3. Simmer gently on low heat for 2-3 hours, occasionally skimming and adjusting seasoning with salt as needed.
  4. Once the chicken is tender, remove it from the pot. Strain the broth through a fine sieve.
  5. Return the broth to the pot. Shred the chicken meat and add it back to the soup.
  6. Finely chop fresh parsley and sprinkle over the soup before serving.
