Rosół is a traditional Polish soup that serves as a heartwarming symbol of Polish culinary art. Known for its rich flavor and wholesome goodness, Rosół is often reserved for family gatherings or Sunday dinners. Originating in the medieval period of Poland, Rosół is much like a classic chicken noodle soup but enriched with a radiant broth from a slow-simmered whole chicken and a medley of vegetables, making it an aromatic and satisfying dish.

Ingredients

  • Whole chicken – 1.5 kg / 3.3 lbs
  • Carrots – 2 large, peeled and sliced
  • Celery stalks – 2, sliced
  • Parsley root – 1, peeled and sliced
  • Leek – 1, sliced
  • Onion – 1, halved
  • Garlic – 2 cloves, crushed
  • Bay leaves – 2
  • Black peppercorns – 1 tsp
  • Salt – to taste
  • Allspice berries – 4
  • Water – 3 liters / 12 cups
  • Noodles – 200 g / 7 oz
  • Fresh parsley – to garnish

Instructions

  1. In a large pot, place the whole chicken and add 3 liters of cold water. Bring to a boil, then reduce the heat to a simmer.
  2. Skim off any scum that forms on the surface using a ladle, ensuring the broth remains clear.
  3. Add carrots, celery, parsley root, leek, and onion to the pot. Stir in garlic, bay leaves, black peppercorns, salt, and allspice berries.
  4. Simmer the soup for about 2-3 hours until the chicken is tender and falling off the bone.
  5. Remove the chicken from the pot. Strain the broth to remove vegetables and spices, ensuring a clear soup.
  6. Return the broth to the pot and bring to a gentle boil. Add the noodles and cook according to package instructions.
  7. Shred the chicken meat, discarding the skin and bones. Add the meat back to the pot once the noodles are cooked.
  8. Serve hot, garnished with freshly chopped parsley.

Substitutions

  • Whole chicken -> Chicken thighs or drumsticks
  • Parsley root -> Parsnip
  • Noodles -> Egg noodles or spaghetti
