- beef shank – 500 g / 1.1 lbs
- chicken thighs – 500 g / 1.1 lbs
- pork belly – 300 g / 10.5 oz
- chorizo sausage – 150 g / 5.3 oz
- chickpeas – 250 g / 8.8 oz, pre-soaked
- potatoes – 400 g / 14 oz, peeled and chunked
- carrots – 200 g / 7 oz, peeled and sliced
- cabbage – 200 g / 7 oz, chopped
- onion – 1 large, peeled and quartered
- garlic cloves – 4, peeled
- bay leaf – 2
- black peppercorns – 10
- salt – to taste
- water – 3 liters / 12 cups
Instructions
- In a large pot, add the beef shank, chicken thighs, pork belly, and chorizo. Fill with water and bring to a boil.
- Skim off any foam that rises to the surface, then add the pre-soaked chickpeas, onion, garlic, bay leaves, and peppercorns.
- Reduce the heat to low and simmer gently for 1.5 hours.
- Add the potatoes, carrots, and cabbage. Continue cooking for another 30 minutes until all the ingredients are tender.
- Season with salt to taste before serving.
