Poulet DG, short for ‘Directeur Général’s Chicken’, is a celebrated dish from Cameroon. Its rich heritage is linked to the influential executives or ‘Directeurs Généraux’ of Cameroonian companies, for whom this lavish dish was originally intended. The dish is a delightful blend of tender chicken, ripe plantains, and a symphony of spices and vegetables, creating a comforting yet sophisticated entrée. Over time, Poulet DG has transcended its status as an executive delicacy to become a beloved staple in Cameroonian households, cherished for its joyful celebration of flavors and communal spirit.

Ingredients

  • chicken thighs – 1 kg / 2.2 lbs
  • ripe plantains – 4, medium-sized
  • bell peppers – 2, mixed colors, sliced
  • carrots – 2, medium, sliced
  • onion – 1 large, diced
  • garlic cloves – 4, minced
  • ginger – 1 inch / 2.5 cm piece, minced
  • tomatoes – 3, large, diced
  • chicken broth – 1 cup / 240 ml
  • palm oil – 1/4 cup / 60 ml
  • thyme – 1 tsp
  • bay leaves – 2
  • salt – to taste
  • black pepper – to taste

Instructions

  1. Peel and slice the plantains into thick rounds. In a large skillet, heat palm oil over medium heat and fry plantain slices until golden. Remove and set aside.
  2. In the same skillet, add the chicken thighs and brown on all sides. Remove and set aside.
  3. Add sliced onions, minced garlic, and ginger to the skillet. Sauté until onions are translucent.
  4. Stir in diced tomatoes, thyme, bay leaves, salt, and pepper. Cook until tomatoes break down.
  5. Return chicken to the skillet, add carrots and chicken broth. Bring to a simmer, cover, and cook for 20 minutes.
  6. Add bell peppers and reserved fried plantains. Stir gently, cover, and cook for another 10 minutes or until vegetables are tender.
  7. Adjust seasoning and serve hot.
