Ingredients

  • Potatoes – 4 medium / 600 g
  • Carrots – 2 medium / 120 g
  • Celery stalks – 2 / 100 g
  • Onion – 1 large / 150 g
  • Garlic cloves – 3 / minced
  • Bacon – 150 g / diced
  • Vegetable broth – 1 liter / 4 cups
  • Heavy cream – 120 ml / ½ cup
  • Butter – 2 tablespoons / 28 g
  • Fresh dill – 2 tablespoons / chopped
  • Salt – to taste
  • Black pepper – to taste

Instructions

  1. In a large pot, melt the butter over medium heat. Add diced bacon and cook until crispy. Remove bacon with a slotted spoon and set aside.
  2. In the same pot, add diced onion, carrots, and celery. Sauté until the vegetables are softened, about 5 minutes.
  3. Add minced garlic and cook for an additional minute until fragrant.
  4. Stir in diced potatoes and pour in the vegetable broth. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes until potatoes are tender.
  5. Use a potato masher to roughly mash some of the potatoes in the pot for a creamier texture.
  6. Stir in the heavy cream and season with salt and black pepper to taste.
  7. Serve hot, garnished with crispy bacon and fresh dill.
