Ingredients
- ripe tomatoes – 8 large / 1.2 kg
- walnuts – 2 cups / 240 g
- onion – 1 medium / 150 g
- garlic cloves – 3
- coriander – 1 teaspoon
- cayenne pepper – 1/4 teaspoon
- water – 1/2 cup / 120 ml
- salt – to taste
- fresh cilantro – 1/4 cup chopped / 15 g
Instructions
- Core the tomatoes and finely grate them into a bowl, separating the skin.
- Grind walnuts to a fine paste using a food processor.
- In a pan, sauté chopped onion until translucent.
- Add minced garlic to the onion, stirring for 1 minute.
- Combine ground walnuts with grated tomatoes and transfer to the pan.
- Stir in the cayenne pepper, coriander, water, and salt. Simmer for 15-20 minutes until thickened.
- Garnish with chopped cilantro before serving.
