- Chicken thighs – 1 kg / 2.2 lbs
- Vegetable oil – 3 tbsp / 45 ml
- Onion, finely chopped – 1 medium / 150 g
- Garlic cloves, minced – 3 cloves / 15 g
- Bell pepper, sliced – 1 medium / 150 g
- Tomatoes, chopped – 2 large / 300 g
- Chicken broth – 1 cup / 240 ml
- Sour cream – 1 cup / 240 g
- Lime juice – 2 tbsp / 30 ml
- Salt – 1 tsp / 5 g
- Black pepper – 1/2 tsp / 2 g
- Fresh cilantro, chopped – 1/4 cup / 15 g
Instructions
- Heat the vegetable oil in a large skillet over medium heat.
- Add the chicken thighs and cook until browned on both sides. Remove and set aside.
- In the same skillet, add the onion, garlic, and bell pepper. Sauté until the onion is translucent.
- Add the chopped tomatoes and cook until they begin to break down.
- Pour in the chicken broth and bring to a simmer.
- Return the browned chicken to the skillet and cover. Simmer gently for about 20 minutes, or until the chicken is cooked through.
- Remove from heat and stir in the sour cream, lime juice, salt, and black pepper.
- Garnish with fresh cilantro before serving.
