Ingredients

  • Onion, finely chopped – 1 medium / 150 g
  • Garlic cloves, minced – 3 cloves / 15 g
  • Bell pepper, sliced – 1 medium / 150 g
  • Tomatoes, chopped – 2 large / 300 g
  • Chicken broth – 1 cup / 240 ml
  • Sour cream – 1 cup / 240 g
  • Lime juice – 2 tbsp / 30 ml
  • Salt – 1 tsp / 5 g
  • Black pepper – 1/2 tsp / 2 g
  • Fresh cilantro, chopped – 1/4 cup / 15 g

Instructions

  1. Heat the vegetable oil in a large skillet over medium heat.
  2. Add the chicken thighs and cook until browned on both sides. Remove and set aside.
  3. In the same skillet, add the onion, garlic, and bell pepper. Sauté until the onion is translucent.
  4. Add the chopped tomatoes and cook until they begin to break down.
  5. Pour in the chicken broth and bring to a simmer.
  6. Return the browned chicken to the skillet and cover. Simmer gently for about 20 minutes, or until the chicken is cooked through.
  7. Remove from heat and stir in the sour cream, lime juice, salt, and black pepper.
  8. Garnish with fresh cilantro before serving.
